Electric fryers have come a long way towards being a welcome addition to any kitchen.  Gone are the days when trying to get an even, golden-brown coating on chicken or fries you had to stand over a hot pan of boiling oil as you rotated the food for even cooking.

Contrary to the belief that all fried foods are bad for you, it is possible to quick fry foods that absorb very little oil.  Today’s electric fryers come in a variety of shapes and sizes allowing the consumer to select the right model for their use. There are many features available on the modern electric fryers that will enhance the ease of use; such as built-in filters (to eliminate odors), adjustable thermostats, and cool-touch bodies.

Since working with hot oil is a safety concern, it is important to look at the different safety features available on the electric fryers you choose. A break-away plug allows the unit to separate cord if it is pulled. This will prevent the possibility of the equipment overturning and the hot oil being spilled.  Another nice feature available is having a cover which remains closed during the cooking process. This helps to eliminate splatter in addition to controlling odors.

The size of the electric fryers will dictate the amount of oil used. It is important to choose oils that are recommended for this type of cooking, such as canola oil.  In addition, you may want to select one of the electric fryers that features multiple frying baskets.  The more, the merrier!  The additional basket can be placed in the hot oil as you pull out the first basket, allowing larger volumes of food to be cooked in quick succession.

From appetizers through desserts, you will find many uses. Take a corn tortilla and cut it in wedges. Place them in the electric fryer to start a batch of homemade nachos and chips. Take a candy bar, dip it into a funnel cake batter, and place it into the hot oil. You are in for a county fair type treat coming from your own electric cooker.

For those watching their fat intake, keep in mind that using electric fryers doesn’t mean you are loading up your food choices with lots of fats. Cooking foods at the correct temperature (375 degrees F/190 degrees C), will allow batter- or breaded-foods to form a protective barrier and prevent the oil in the electric fryers from penetrating through the coating.
